Tasting the wine in production

Every so often we go to visit our wine producer, the wonderful Halfpenny Green Vineyards in Staffordshire. We sample the wine in production, decide on dosage, decide how long the wine should be left on the lees (extra complexity) and, very importantly, thank them for the wonderful job they do for us. Our 2019 vintage is now ready, and we brought the first few cases of rosé (having spent 3 years on the lees) back with us.
